RAYMOND CHAN’S THOUGHTS ON OUR 2016 SAUVIGNON AND 2015 PINOT

Bright, pale straw-yellow colour with slight lemon-green hues.  The nose is fresh with tightly bound aromas of ripe gooseberries and hints of passionfruit, along with stonefruits, white florals and chalky mineral notes.  This has good depth and intensity.  Medium-full bodied, the palate is bright and vibrant with stylishly concentrated flavours of gooseberries, green stonefruits and passionfruit, with notes of herbs and chalky minerals.  The fruit is enlivened by the fresh acidity and the wine flows along a fine, phenolic textured, mouthwatering line with good drive and energy.  The wine carries to a long, lingering, dry and chalky finish.  This is a finely concentrated Sauvignon Blanc with stylish gooseberry, stonefruit and passionfruit flavours on a chalky, minerally, fine-textured, refreshing palate.  Serve with salads and vegetables, herb-marinated seafood and poultry, and Mediterranean fare over the next 2+ years.  Fruit from 6 vineyard sites, hand-picked and WBP, fermented in tank with 12% in seasoned French oak by indigenous yeasts, to 13.5% alc. and <1.0 g/L RS, the wine aged 10 months on lees.

Even, dark ruby-red colour, a little lighter on the rim.  The nose is softly full and well-packed with deep aromas of savoury dark-red berry fruits melded with a complex layering of dark herbs, whole bunch stalk notes, unveiling some nutty oak.  This nose has fruit richness and freshness.  Medium-full bodied, the palate has a sweetly rich core of complex flavours of savoury dark-red fruits along with notes of liquorice and suggestions of spicy plums.  Dark herb and whole cluster stalk detail add to the interest.  The flavours are harmonious and well-balanced, showing good depth and presence.  The fruit richness is balanced and supported by fine-grained tannin extraction and fine acidity which allows the fruit to prevail, carrying to a long, lingering finish. This is a rich-fruited and complex dark-red berried Pinot Noir with herb, spice and stalk notes on a palate with good depth and real presence.  Match with duck, pork, beef and lamb dishes over the next 6+ years.  Hand-picked fruit from the ‘Twin Valleys’ vineyard in Fareham Road, the ‘Byrne’ vineyard and from Ward, indigenous yeast fermented with 20% whole bunches to 13.9% alc., the wine aged 18 months in 18% new French oak barriques,
